Grilling with Finesse

Sweet and Savory Burgers and Guacamole
INGREDIENTS Makes 4 burgers
For the Burgers
• 2½ lbs grass-fed ground beef
• ½ cup Granny Smith apple, chopped
• ¼ cup fresh jalapeño, finely chopped
• 1 avocado, sliced
• 1 mango, thinly sliced
• 1 lime, quartered
• 4 large butter leaf lettuce leaves
• 2 slices smoked Applewood bacon
• 4 slices grass-fed cheddar cheese
• 2 tbsp extra-virgin olive oil
• salt and pepper, to taste
• 4 Brioche buns
• 4 eggs (optional)
For the Guacamole
• 2 large avocados, peeled, seeded, chopped
• ½ jalapeño, seeded and chopped
• ¼ cup pico de gallo
• 1 tbsp fresh lemon or lime juice
• ¼ tsp salt
• ¼ tsp pepper
• ¼ tsp garlic powder
STEP 1: Cook bacon (crispy is best).
STEP 2: Put ground beef into large bowl.
STEP 3: Fold chopped Granny Smith apple, chopped jalapeño, and bacon into ground beef until mixed well.
STEP 4: Add salt, pepper, and lime juice (from ¹⁄₂ a lime).
STEP 5: Shape into four hearty patties.
STEP 6: Heat outdoor barbecue to medium high.
STEP 7: Place patties on grill and cook with lid closed for about 4 minutes on each side until cooked through to medium. (Note: You can also lightly toast the buns on the grill to warm and crisp.)
STEP 8: Add cheese and let melt.
STEP 9: Combine all guacamole ingredients in medium bowl. Add fresh squeezed lime, salt, and pepper to taste.
STEP 10: Place burgers on bun. Top each with butter leaf lettuce, 2 to 3 slices avocado, 2 to 3 slices mango, a splash of lime, and guacamole. (You can also add a sunny-side up egg for a little extra oomph.) Put on top bun and enjoy.
Grass-fed beef is a protein that is not only easy on the body but also one of the most insanely tasty versions of red meat you can get.
